蠔油牛肉 (Oyster Sauce Beef)

蠔油牛肉

Ingredients:
1. 450g Beaf, 1 bunch green onion, 3-5 piece sliced ginger
2. ¼ tsp baking soda, 1 tsp oil
3. 1 egg, 1 tbsp soy sauce, 1 tsp dark soy sauce, ½ tsp pepper, ½ tsp sugar, 1 tbsp corn starch
4. 2 tbsp cooking alcohol, 2 tbsp oyster sauce, 2 tsp soy sauce, 2 tbsp water, ½ tsp sugar
5. 1 tablespoon water, 1 tsp corn starch
6. 1 cup oil
Directions:
1. Cut beef into 4 cm long, 1.5 cm wide, thin slices. Sock into water, and washed away blood, then drain (don’t squeeze beef to keep meet contain some water).
2. Mix drained beef with ingredient in list 2. (Note: added baking soda and oil in beef in a key step for fry beef)
3. Coat the beef with ingredient in list 3, see figure 1, Mix them well and put it in refrigerate (>0oC) for at less 30 min. (Note, allow 30 min for beef to rise after add baking soda is must, left it in refrigerate overnight is ok.)
4. Cut green onion into 1.8 cm long pieces. Sliced ginger. Mix in gradient 4 in a bowl, Mix ingredient 5 in another bowl (figure 2).
5. Heat fry pan, after pan reached medium-high temperature, added 1 cup cold oil (figure 3).
6. When oil reached medium temperature (not smoking yet), put meet in pan, stir and cook until meat color all changed (figure 4). Transfer cocked meet out of pan and drain extra oil.
7. Leave a litter oil in pan and heat, but green onion and ginger in and fry until onion become soft (figure 5), put ingredient 4 in, after boiled, put ingredient 5 in and stir well, then put cocked meat back to the pan stir and mixed well with all ingredient. Done figure 6. Transfer cooked meet into a plate and serve immediately.
