To be able to overcome the pain reflex at biting off your own finger would take a superhuman act of will, as might be necessitated by gangrene. When you know your fingers are going to kill you it's much easier to psych yourself up to biting them off. Also the nerve endings would be somewhat deadened by necrosis, making the process slightly easier. Think 127 Hours. To bite your own fingers off on command, with no preparation is going to be impossible for most people. You almost have to be a psycho to start with.
