西餐的上菜程序

西餐正餐正式的全套餐点上菜程序通常是:面包黄油(Bread & Butter)→前菜:包括开胃点心(Appetizers)、蔬菜色拉(Salads)、海鲜(Seafoods) →汤(Soups )→主菜(Entrees)→餐后甜点心(Desserts)→咖啡,茶和水果。相应的酒包括餐前酒(开胃酒)和餐酒。

面包黄油通常在客人落座后很快就上桌了,每个餐厅都有自己独到的东西 面包装在衬有餐巾的小筐里或大盘子里,外加一小盘造型灵巧的黄油。我曾经在普林斯顿的一家餐厅吃到全麦粉烤制的酸面包,搭配的黄油一颗颗做得像乳白色的仿古钮扣。听说这家餐厅因此有一些老顾客。而在埃文思维尔一家吃到了香喷喷热乎乎刚出炉的萱软奶油小面包,那黄油象一朵朵白色的小野菊。

前菜(这是我的翻译方式,一些资料里翻作冷菜或头盘菜)通常可细分为:开胃小菜(Appetizers)称为第一道菜(也叫头盘菜—the first course)。色拉(Salad)称为第二道菜(the second course)。上文提到开胃小菜的英文Appetizer是美式用法。英式用法是Entrée, 而英式用法中主菜用Main。汤(Soup )也是在主菜之前上桌的。汤分渍汤和奶油浓汤,渍汤是蔬菜为原料的清淡汤。浓汤放有肉类或海鲜,加奶油调制的很稠辅菜、汤可同时就着面包吃。

主菜有鱼、猪肉、牛肉、羊肉、鸡肉等,是一个拼装盘,你点的主菜是一般搭配有蔬菜和主食。每道菜的配料都写在菜单里的。西餐上主菜盘子很大,菜量非常足。饭量小的人吃不完。

有一点要特别说明的是老外吃海鲜要用单独的餐具,在前菜中点海鲜,比如牡蛎(Oysters)要用专用的小叉子,如果点蟹虾等需要用手拿着吃的,要上洗手碗,吃完后要洗手。在海鲜餐厅和豪华餐厅海鲜作为一类主菜,菜单(Menu )中专有海鲜主菜(Seafood Entrees)系列,记住吃鱼吃肉用不同的刀叉。

甜食常有冰淇淋(Ice Creams)、布丁(Pudding) 、派(Pies) 、奶酪蛋糕(Cheesecake)等。然后是咖啡或红茶。至于水果,可上可不上。
