暑假最后一次请客－－热情奔放的西班牙大餐

喜欢西班牙菜。三年前就是因为看了PBS的一套西班牙菜系列，和老公流着哈喇子，去西班牙玩了一圈。

这周末又请客，主题是西班牙风味，和最要好的两家朋友度过一个精彩夜晚，fun food, fun conversations。我们几家朋友认识多年，比兄弟姐妹还要贴心，朋友是我们生命中最大的财富。

前菜
Spanish Devils 西班牙魔鬼

这道菜外表和名字一样吓人，但味道吗－－两个字，freaking awesome！枣的甘甜搭配chorizo的鲜咸，fontina的奶香，吃到嘴里，会让小宇宙大爆炸，超级赞！！
24 Medjool dates (approx 1 lb. package)
2 ounces dry chorizo, skinned and finely chopped (1/3 cup)
3 ounces Italian Fontina cheese, shredded ( 1/2 cup)
Preheat oven to 350°. Make a small slash in each date and remove the pits, keeping the dates intact. Mix cheese and chorizo together in a bow. Fill each date with chorizo and cheese, pinch them closed and set them on a baking sheet. Bake for about 12 minutes, until the cheese is melted. If they are large, cut each date in half crosswise, transfer the Spanish devils to a platter and serve warm. The stuffed dates can be refrigerated overnight. Bake them before serving.

Patatas Bravas 香辣马铃薯

又香又辣，很惹味！这个辣酱提前一天做好，鲜明带劲，下酒一级棒。

Samfaina (Vegetable Stew) 红椒茄子蔬菜乱炖

全部蔬菜煮到绵软入味，再加上basil增香，很顺口，是我喜欢的味道。
1 eggplant, 1 red bell pepper, 1 yellow onion, 1 large tomato, 1 garlic, add basil at end.

Ensalada de Pimientos Rojos Asados 烤红椒

上次在西班牙南部玩时候，在网友美女(A型双鱼座女声)家吃大餐，她婆婆做的，柔软甜润，充满蔬菜的香甜，至今念念不忘。
6 roasted red pepper, 2 tbsp roasted garlic, 2 tbsp sherry vinegar, 1 oz toasted flaked almonds, 2 tbsp chopped parsley

Spinach with chickpeas 菠菜鹰嘴豆

这是当天的失败品，原方子用了很多香料，nutmeg, cinnamon, cumin, cloves，结果味道混得很怪，还有那个醋也很不搭。建议这几样都不用，简单食材味道更佳。
2 packages spinach, 4 garlic, 1 tsp sweet paprika, 1 small pinch red pepper flakes, 4 plum tomatoes, 1 can chickpeas, salt , 2 tsp red wine vinegar. Blanch spinach, squeeze out water, chop medium-fine. Cook garlic and spice and tomato, add spinach and chickpeas. Spread toasted flaked almonds on top.

柳丁拌洋葱 Ensalada de Naranjas (Orange Salad With Onions)

很脆甜爽口的一道菜
4 orange, 1 red onion, 2 teaspoon capers, chopped parsley

西班牙火腿炒蔬菜

芦笋和荷兰豆分别用半杯鸡汤，盖上盖子两分钟，焖熟。橄榄油爆香西班牙火腿小粒，加上鸡汤，和荷兰豆，芦笋混合，很香。这两种蔬菜都清甜可口。

Paella 西班牙海鲜饭

华丽丽的主角登场了！谢谢私房suezi-q姐姐的方子。我没用鸡肉，用西班牙chorizo和洋葱红椒煸香。海鲜也都是当天买的最新鲜的料，saffron和paella rice当然更不能少。其实煮这锅饭也没有那么麻烦，一切食材下锅后，听着水焖饭的滋滋声，好期待啊！最后打开盖子时，海鲜饭五颜六色的丰富画面，满满的香气逼人，肥美细嫩的海鲜和吸饱了汤汁的米饭粒粒鲜甜，客人都吃的很high，真是让厨娘开怀。

西班牙啤酒鸡

谢谢三色猫的方子。真的就像色猫说的，“这道菜鸡肉酥软，芥末的微辣，西红柿的甜酸，啤酒的啤酒花香给这道菜带来丰富的味觉享受。整道菜简单易做，大人小孩都爱吃。”

中间那盘大的就是flan。卖相欠佳，我的焦糖都不够上色，不过口感绵密香甜。

那四个小盘的就是crema catalana，也是跟私房suezi-q姐姐偷师的方子，可是我没有那个火炬喷焦糖，只好用broil的，结果悲剧了，一整个塌陷。。。

Lemon Cupcake

邻居给的正宗方子，很可口喔！
2 cups of sugar
2 cups of milk
3 eggs
1cup of white flour
3 tbs of butter
1 tbs lemon extract
Mix all the ingredients together
Pour into buttered cupcake pan. Bake it at 330 temp for 45 mins.

过两天就要出门旅行，到开学前一天才回来。这个暑假过得好快，还有好多想做的菜式，只能等到开学以后，再慢慢一样一样来试，继续请客。
