孝敬公婆的寮国菜

公公婆婆来这里过节。在同龄的中国人中,他们在吃方面真的是相当easy-going,什么国家的菜都愿意尝试。这次笨笨媳妇做了一桌寮国菜,但事先卖个关子。每一样都试过后,请他们猜是哪国菜。婆婆说,“很像泰国菜,但一定不是泰国菜。”公公说,“有点像越南菜,但又不太一样。”这样他们再把泰国越南周边几个国家联想一下,很快就猜对了是寮国菜!真佩服他们!!



Hot and Sour Mushroom Soup

酸酸辣辣的,很像泰国的冬阴功汤。


Mince 1 shallots, add 1 stalk lemongrass, 2 whole thai green chili, 1/2 can yanang extract, fish sauce, mushroom. Boil for 15 minutes.
Dish out and add minced green onion and basil leaves.

Squid Salad 凉拌鱿鱼圈


Blanch squid, mix with 2 tbsp lime juice, 1 fresh thai chili, 2 tbsp fish sauce and 1 tbsp sugar, garnish with red pepper and cilantro.

凉拌笋子


笋子川烫过,跟小番茄,红椒,香菜,小辣椒,葱蒜,鱼露,一点点糖,全部混合。

Laab Gai(minced chicken salad)

据说这是寮国的国菜,现在在大多数泰国餐馆也有,蛮健康清新的一道菜。


1/4 cup uncooked sweet rice
2 pounds ground chicken ?
2 tablespoons peanut oil ?
4 cloves garlic, minced ?
2 tablespoons minced galangal
2 small red chile peppers, seeded and finely chopped ?
4 green onions, finely chopped ?
1/4 cup fish sauce ?
1 tablespoon shrimp paste ?
1 tablespoon white sugar ?
3 tablespoons chopped fresh mint
2 tablespoons chopped fresh basil
2 tablespoons chopped cilantro?
1/4 cup lime juice

Preheat an oven to 350 degrees F (175 degrees C). Spread the rice onto a baking sheet. Bake the rice in the preheated oven until golden, about 15 minutes. Remove and allow to cool. Once cooled, grind into a fine powder with a spice grinder.

Heat the peanut oil in a wok or large skillet over medium heat. Stir in the garlic, galangal, chile peppers, and green onions; cook and stir until the garlic softens, about 3 minutes. Add the ground chicken and cook, stirring constantly to break up lumps, until the meat is no longer pink, about 5 minutes. Season with fish sauce, shrimp paste, and sugar. Reduce heat to medium-low, and simmer until the excess liquid has evaporated, about 5 minutes more. Stir in the ground rice, mint, basil, and lime juice to serve.

Tam Mak Hoong (green papaya salad)
另一道寮国的传统名菜。



Mix shredded green papaya, 2 clove garlic, 2 fresh thai chili, 3 snake beans, 8 cherry tomatoes, 1 lime, 1 tbsp fish sauce, 1 tsp shrimp paste, 2 tsp palm sugar

Lao-style Grilled Fish
寮国菜用很多新鲜的香料香菜,烤鱼很香啊!


Season salmon with lemongrass, dill, kiffir lime leaves, scallion, ginger, and chili, salt.  Bake at 450 for 10 minutes.  Sprinkle with cilantro

Roast Duck Laotian Style
当晚的明星菜出场了!鸭子腌了一个晚上,味道很足。

耗油, soy sauce,salt,garlic, ginger, lemon grass, coriander stems, shallots, white pepper 400degree C 30 minutes

Lao Eggplant Dip (jeow mak keua)
寮国人吃饭喜欢摆很多酱类配菜。这款茄子酱就是最家常的一种。


4-8 Thai Bird Chilies shallots tomato?4-5 Cloves of Garlic?1/2 Cup Chopped Cilantro Leaves?1-2 Stalks Green Onion - Green parts only sliced thin?1/2 Tsp Salt?Fish Sauce
Roast Eggplant and mix with all ingredients.

甜点:糯米椰奶甜点
店里买的。一字排开,五颜六色的真好看。

我已经在家里做妈妈五年啦!这些菜都是我学着玩办家家的,很享受整个过程!如果总是煮同样的菜,没什么新意,我都没什么热情了,但是一直学新菜,一边学习这个国家的历史文化风土人情,真的好有趣喔,越学越开心。
Mercury 回复 悄悄话 謝謝,我明天就去Wholefoods看看。 你的好本領學得真是快,好像一下子就弄出一桌筵席。記得你幾年前才從戰場上退下來,在家又有一套本事。 如果你的菜拿去私房小菜,肯定會有不少姐妹來學你做的好菜。
lepton 回复 悄悄话 其实我的窍门是去wholefoods 的bulk spice,每种挖两勺子,放小小袋子,这样不占地方啦。
