2013年最后一次请客--土耳其大餐

圣诞节快乐!上周五请了三家朋友来家里欢聚一堂。这次煮的是土耳其菜。朋友们都很喜欢,连小朋友都非常捧场,真的好开心!

煮了很多菜。土耳其菜用的香料不多,大部分是取食材的本身的清甜味道,特别喜欢用茄子,甜椒,番茄,非常对我们的口味。

红扁豆汤 Red lentil soup

这个汤真的超赞!非常非常美味,还超健康。豆子粉粉糯糯的,吸取了蔬菜的甜香,大冷天的来一碗特别暖胃温心,好满足!
Ingredients:
2 cups red lentils
1 onion, chopped 
2 leeks, white part only, chopped
3 cloves garlic, minced garlic 
1 tablespoon kosher salt
a few grinds of black pepper
1 tablespoon minced fresh thyme leaves
1 teaspoon ground cumin
6 stalks celery, medium-diced 
4 carrots, medium-diced 
2 quarts vegetable stock
1/4 cup tomato paste
2 tablespoons red wine vinegar

Directions
In a large bowl, cover the lentils with boiling water and allow to sit for 15 minutes. Drain.

In a large stockpot on medium heat, saute the onions, leeks, and garlic with the salt, pepper, thyme, and cumin for 20 minutes, until the vegetables are translucent and very tender. Add the celery and carrots and saute for 10 more minutes. Add the vegetable stock, tomato paste, and lentils. Cover and bring to a boil. Reduce the heat and simmer uncovered for 1 hour, until the lentils are cooked through. Check the seasonings. Add the red wine vinegar and serve hot.

友情提醒一下,我没有把red wine vinegar加入汤里,而是放在桌上,请朋友们自行取用。我自己觉得加了味道更丰富,但是不是每个人喜欢汤里加醋。

烤茄泥Baba Ghanoush

很香很糯,微酸的味道,很合我们的胃口。
茄子一只用火烧皮焦,把皮小心剥下来,里面的茄子用柠檬,芝麻酱,大蒜一起拌匀。


Cacik 酸奶黄瓜

这是一味经典的土耳其side dish,比起希腊的Tzatziki比较稀。拌着跟烤肉吃更是绝配。
1 clove of garlic, minced with salt
1 cup cucumber, diced
1 1/2 cup plain yogurt
1 cup water
Extra virgin olive oil
Fresh dill, chopped
Place the garlic, yogurt and water in a medium sized bowl. Mix with a wooden spoon until it is blended very well. Add diced cucumber and mix again. With a ladle pour into small bowls and then add 1 tbsp of olive oil on top of each. Garnish with fresh dill. 

Fasulye Piyazi (White Bean Salad) 白豆沙拉

很容易,一罐白豆,加小番茄,切碎的红葱,红甜椒,黑橄榄,capers,现榨的柠檬汁,新鲜薄荷叶。味道清新。

Patlican Biber Kizartmasi (Roasted eggplant, Red peppers, red onion, tomato, garlic)  烤茄子甜椒

茄子和甜椒,红葱,都被烤的香香甜甜糯糯的,非常好吃!这个菜我家会经常做。
1 medium eggplant
2 red bell peppers, seeded
1 red onion, peeled
2 garlic cloves, minced
3 tablespoons good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon tomato paste
Directions:
Preheat the oven to 400 degrees F.
Cut the eggplant, bell pepper, and onion into 1-inch cubes. Toss them in a large bowl with the garlic, olive oil, salt, and pepper. Spread them on a baking sheet. Roast for 45 minutes, until the vegetables are lightly browned and soft, tossing once during cooking.  Add tomato paste.

Roasted Cauliflower With Lemon Parsley Dressing 柠檬香芹烤花菜

cauliflower, 2 tbsp olive oil, 1/2 cup parsley, with 2 tbsp lemon juice, 1 tsp lemon zest, 2 garlic cloves, salt and pepper
Preheat oven to 425°F. Toss cauliflower and 4 tablespoons oil on a rimmed baking sheet; season with salt and pepper. Roast, tossing occasionally, until tender and golden brown, 25–30 minutes.
Meanwhile, pulse parsley, lemon juice, and remaining 2 tablespoons oil in a food processor until very finely chopped; season with salt and pepper. Toss cauliflower with lemon-parsley mixture and top with lemon zest.

Roasted Cauliflower and Kabocha Squash with cilantro and Pomegranate 烤花菜南瓜
同样方法烤花菜和南瓜,拌上香菜和石榴。好看又好吃。

 
Spinach with pine nuts 松子炒菠菜

sautéed with shallots, pine nuts,  garlic.以后又有一种炒菠菜的好方子了!

 
Bulgur Pilaf  小麦米饭

这是土耳其媳妇Acme的家传方子:洋葱和长辣椒(long peppers) 切丁,放锅里,橄榄油炒断生,加 tomato paste 一罐,注意不是 ketchup, 和洋葱辣椒丁混均匀。这时候先加水,再加 bulgur (麦仁碎)。比例是水1.3 1 bulgur ,更保险的比例是像焖米饭的水和米的比例,总的目的就是像焖米饭一样把米焖熟。焖饭的过程是,加了水和 bulgur 以后一定大力搅和均匀,不沾底。加盐。之后就等这个混合粥状物沸腾,一沸腾就关小火,盖着盖,文火等米饭慢慢收水变熟,就像焖饭一样,一锅 bulgar pilaf 就好了. 最后程序是,把一把 Parseley 的叶子摘下来,稍微切碎,混在 bulgar pilaf 里。
最后一个关键贴士,这一切都做好以后,拿干毛巾或者多层 paper towel 盖在锅上,然后锅盖压在上面,这样多余的水汽就会被吸走,这锅干饭就会蓬松。

小爱,我都照做了,还特别拿毛巾盖上,可是我的饭没有蓬松呢。大概是焖饭中途我发现快粘锅了,又加了水,大概水加的太多了。不过还是很好吃!

Imam Fainted 牧师晕倒了(土版佛跳墙)
我一看这个菜名就觉得好好玩,一定要试一试。传说一位Imam(伊斯兰教的牧师)新娶了一位很会煮菜的太太,嫁妆就是上好的昂贵橄榄油。新婚太太给他煮了这道美味,不知道是因为菜太美味,还是见到用的橄榄油太多,Imam居然晕倒了。我觉得这个故事好可爱,是不是有点像中国的佛跳墙传说?

这个菜真的好好吃,是当天客人们交相称赞的一道。
  • 8 medium Japanese eggplants
  • 5 yellow onions
  • 5 ripe tomatoes, diced
  • 6 garlic cloves, sliced
  • 2 tsp. sugar
  • 3/4 cup extra-virgin olive oil
  • 2 tsp.salt
  • ½ tsp. black pepper
  • 8 long, thin strips of green pepper (hot or sweet)
  • more olive oil or light vegetable oil for frying
  1. First wash your eggplants, then cut of both ends. Using a vegetable peeler or sharp paring knife, cut alternating strips of skin from end to end to make a striped pattern on each eggplant.
  2. Using the tip of your knife, cut a slit lengthwise starting and ending about ½ inch or 1 cm from each end. Be careful not to cut the slit too long. To remove some of the bitterness, soak the eggplants in salted water for about 10 minutes.
  3. While the eggplants are soaking, peel and cut your onions in quarters then slice them. Separate the layers. Also wash and clean the insides of your peppers to remove the seeds. Cut each one in half then cut each half lengthwise so you have 8 pieces.
  4. Heat the ¾ cup olive oil in a large saucepan. Add the onions and garlic slices and fry them until they are softened and translucent. Add the diced tomato, salt, pepper and sugar. Stir togther and let it simmer for a few minutes over medium heat.
  5. While the onion and tomato mixture simmers, pour about ½ inch of olive oil in a large frying pan. Fry the whole eggplants on each side until they begin to soften. Drain the extra oil on paper towels and leave them cool.
  6. Arrange the eggplants side by side leaving some space between them in a large baking pan. Open each eggplant where you made the slit and stuff it generously with the onion mixture. Place a strip of pepper on top of each eggplant. Bake them in a 200°C /390° F oven for 20 to 30 minutes, or until the liquid is reduced.
  7. Remove them from the oven, then let them cool down to room temperature. Drizzle asmall amount of olive oil over the top, cover and refrigerate them. Serve them cold garnished with a little chopped parsley, if desired.
Sesame Seed Chicken (Susamli Tavuk) 土耳其芝麻鸡

超赞!给大家推荐!

500 gr chicken wing drummettes
1/2 cup milk
3/4 cup sesame seeds
1/4 cup breadcrumbs
1/2 tsp cayenne pepper, ground
Salt
Pepper

Place the milk in a small bowl. Place sesame seeds, bread crumbs, crushed pepper, salt and pepper in another cup and mix. First soak the chicken drums in the milk, then cover them with the sesame seed mixture. Arrange them on the oven tray on top of parchment paper. Don't let them touch each other, otherwise they won't be crispy.

Preheat the oven 400 F (200 C) and cook for about 45 minutes until they take a golden color. Sesame Seed Chicken is a great party dish, especially in the summer, enjoy :)

SULTAN'S DELIGHT (龙颜大悦)
这个菜名字真的就叫苏丹开怀,我忍不住给它翻译成“龙颜大悦”。其实是煲羊肉配茄泥。一看这菜名,当然要认真的来好好做一次。果真是当晚的明星菜!超级霹雳大推荐!



 
1 lb stew lamb (preferably from leg)
1 onion, finely chopped
2 green pepper, finely chopped
2 tomatoes, petite diced
2 tbsp tomato paste
2-3 tbsp butter
salt and pepper
1/2 cup parsley, finely chopped
1-1 1/2 cup hot water
-Heat butter in a pot and saute the onions for a coupe of minutes. Then add the meat. When browned on all sides, add green pepper. Stir for a couple of minutes.
-Add tomato paste and stir for another couple of minutes.
-Add tomatoes and cook for 5 minutes.
-At this point add the hot water and let simmer until meat is tender, approximately an hour. Add more water if need be.
-Sprinkle with fresh parsley.

2 lb puréed roasted aubergine 
Squeeze of lemon juice
4 tbsp butter
3 tbsp plain white flour
1 ½ cups milk
½ cup hard mature cheese, grated (I used eski ka?ar)
Salt and freshly ground black pepper
-Heat butter in a pot. Add flour and stir constantly to make a roux on low heat.
-Warm the milk and add slowly. Whisk to make the mixture smooth. simmer for 4-5 minutes.
-Add eggplant puree and mix well.
-Add salt and black pepper, and cheese. Mix well. Simmer for another 2-3 minutes.

最后把煮好的羊肉浇在茄泥上,大功告成!不但龙颜大悦,在座的客人大小都吃得大悦。

ADANA KEBAB 烤牛肉、羊肉
1 lb ground lamb / ground beef
 1 onion, very finely chopped
sea salt and pepper
1 teaspoon aleppo pepper
1 tsp red pepper paste
1/2 tsp paprika
1 handful of parsley

烧烤鸡肉串
1 lb chicken breast, cubed
1/2 cup plain yogurt
1/2 tsp cumin
1 tsp red pepper, powder
1/2 tsp cayenne pepper
1 garlic clove, smashed with salt
2 tbsp olive oil

吃的时候配Cacik,还有Sumac粉,用pita饼卷着吃。香啊!


给小朋友买的鸡肉面包和牛肉面包。

这些是我在一家叙利亚人开的家庭小店买的。她家卖的pita饼也好好吃。

甜点是经典的Baklava蜜果酥

我也是在同一家店买的,现做的,不是那种死甜(万幸),被一抢而空。

法国旅游的片子前一阵刚整理出来,在我的博客,特来谢谢你的info. les carmes的片子我放得不多,但是那地方真是让我充分感受到了普罗旺斯。14年夏天如果去意大利的tuscany, 或许我也要找一个类似的地方。
