上个礼拜回请好朋友一家人来家里晚餐。我喜欢玩有主题的请客,今年的主题是民族风味。这次就玩印度菜。
朋友家的儿子和我家弟弟是打小一起长大(也只有长到五岁啦)的铁哥儿们,比较挑食,瘦的像竹竿。女儿才两岁。我还是照着菜谱煮口味重的印度菜。赌了一把。
结果大受好评!我做了一锅豌豆饭,又再煮了三碗白米饭,居然给我全吃光了!我家两个一向对特色菜捧场,这天也不秀气,埋头苦干。小客人妹妹从来没有吃过印度菜,居然一再要求还要还要,添饭添菜。小哥哥也很捧场,虽然辣的直叫,还是直说牙米。

配菜1:茄子 Baigan Ka Bharta
1 eggplant
1 yellow onion, chopped
4 garlic
4 jalape?o
2 tsp roasted chili flakes
1 tsp cumin powder
salt to taste
原方子茄子要在明火上先烧到皮焦再去皮,我懒惰,就改成用蒸熟的。洋葱和辣椒先炒熟,拌上蒸熟的茄子和其他调味料。
配菜2: whole foods crackling cauliflower
我很喜欢whole foods这道菜,在网上查了一下,看到菜谱,自己照猫画虎,真的和店里的味道一样好!
Ingredients:1 head cauliflower, cut into florets;1 medium yellow onion, chopped;2 Tbsp olive oil;1/2 Tbsp curry powder;1/2 Tbsp garam masala;1/2 Tbsp fennel seeds;1/2 tsp red pepper flakes ;2 tsp sea salt;2 garlic cloves, minced;1 Tbsp fresh ginger, grated ;Freshly ground black pepper;1/2 cup frozen peas;1/4 cup chopped fresh cilantro
Directions:1. Preheat oven to 400 degrees.2. Put everything except the peas and cilantro in a large bowl and toss all together.3. Pour into a large baking pan and roast for 25-30 minutes, until the cauliflower is crisp-tender and golden-brown. Every 10 minutes or so, stir it all around with a wooden spoon to make sure it’s all roasting evenly.4. After you remove from oven, stir in the peas and cilantro.
配菜3: Bhindi Masala (Okra Tomato Curry Recipe)
2 pounds okra
1 yellow onion, chopped
1-? teaspoons ginger garlic paste
1 medium-sized ripe tomatoes
3 jalape?o pepper
juice of a lemon
? teaspoon turmeric powder
? teaspoon red chili powder
? teaspoon garam masala
? teaspoon black pepper, freshly ground
3/4 teaspoon salt
1 tablespoon cilantro, for garnish
先炒香洋葱,再把okra和番茄一起入锅,把所有料一起下,拌一拌,大概两分钟就好了。平常我老公不喜欢吃okra,除非是炸的,但出乎意料,这个菜是当晚老公的最爱呢。
