Chinese tomato and egg stir fry

这是给在外地上大学的孩子,写的菜谱,他写了几个菜名,让我给他写出来。 西红柿炒蛋是第一个。 

Vege and egg stir fry is common dish for chinese family. It’s fast, easy, cheap, and made with very simple, everyday ingredients.

1, Crack 2-4 eggs into a bowl. Beat eggs for a minute.

2,Cutting tomatoes into small wedges.Chop the scallion. 

3,Heat the wok over medium heat until it just starts to smoke. Then add 2 tablespoons of oil and make sure it cover the wok, add the eggs. Scramble the eggs for 2 min

 


4, Add the tomatoes and scallions.

5, Stir-fry for 1 minute, and then add 1 teaspoon sugar, 1/2 teaspoon salt (or to taste), 1 - 2 teaspoons of soysauce.

6, Mix everything together, cover the wok, and cook for 2-5 minutes, until the tomatoes are completely softened.

7, Serve with steamed rice or noddle. 

Or any vege for a quick stir fry, like onion,  spinch, green pepper,

etc.
