女儿做的 Chocolate Pixies

         以前,都是我做这款好吃的软饼干给女儿吃。不仅女儿喜欢,我也很喜欢。喜欢它松软湿润的口感,喜欢它巧克力的馥郁香甜。做起来不难,成分简单且营养健康,何乐而不为呢?
       两个星期前的一个星期六,女儿说,她们relay for life 的 team 要自己做点心义卖筹款, 问我做什么好,我就建议她做这款好吃的,且市面上又没有卖的软饼干(soft cookie)。女儿不让我帮忙,自己忙了一晚上,做了5 打,一个没留全部打包。第二天高高兴兴地拿出去卖了。
        昨天,是 Martin Luther King, Jr. Day, 不要上学,等女儿做完了作业,我问女儿能不能再做些软饼干给我们自己吃,女儿欣然答应。立马动手,又做了5 打。
       今早起来,拿了两块饼干,倒上一杯牛奶,坐到桌前,咬一口饼干,口里溢满了饼干的香甜,心里荡漾着女儿浓浓的爱意……



Chocolate Pixies

Ingredients:

4 Tbsp. butter
4 1-ounce squares unsweetened baking chocolate
2 cups all-purpose flour
3/4 cup sugar
4 eggs
2 tsp. baking power
1/2 tsp. salt
1/2 cup chopped walnuts or pecans
Powdered sugar

Directions:
1. In a 1-quart saucepan melt butter and chocolate over low heat, 8 to 10 minutes, cool.
2. In a larger mixer bowl, combine melted chocolate and all remaining ingredients except 1 cup of the flour, the nuts and the powdered sugar. Beat at medium speed, scraping bowl often, until well mixed, 2-3 minutes.
3. By hand, stir in remaining 1-cup flour and nuts. Cover refrigerator until firm (2 hours or overnight) Heat oven to 300 degrees. Shape rounded teaspoons of dough into 1-inch balls; roll in powdered sugar. Place 2 inches apart on greased cookie sheets. Bake in preheated over for 17 minutes or until firm to the touch.
