秋天是丰收的季节,用椰子,南瓜,姜糖,杏脯做蛋糕,丰富,秋意浓浓。
这个蛋糕简单易做,还相当健康,令人惊讶的香脆。:) 秘诀在于,用姜糖+磨碎的烤亚麻籽代替白糖+姜蓉+玉米油。
姜糖--ginger syrup: 4 cups sugar 2 cups fresh ginger, cut into 1/8-inch slices (about 2 large hands) 2 cups water In a medium saucepan over high heat, combine sugar, ginger, and water and bring to a boil. Reduce heat and simmer until syrupy and reduced by half, about 40 to 45 minutes. Strain ginger pieces out and reserve syrup.
蛋糕: 3 杯全麦粉 2 小匙baking powder 1 小匙 baking soda 1 大匙 肉桂粉 1.5杯姜糖 1 3/4 小匙 ground allspice 1 小匙盐 1/2 小匙 ground nutmeg 1 杯磨碎的烤亚麻籽 4 个鸡蛋 1 磅南瓜泥 1 大匙香草精华 3/4 杯切碎的杏脯 3/4 杯椰丝 少许橙皮屑 先把姜糖和亚麻籽用搅拌器打成浓糊,把鸡蛋一个一个加进去,一边加一边打匀。最后把所有干料(除了椰丝,杏脯和橙皮屑),拌进去,拌匀,再加入椰丝和杏脯,橙皮屑。最后,350度烤20分钟即可。
