上一些我家每日饭桌上的菜吧, 大部分菜一看就知道怎么做的,我就不啰嗦了, 菜名我也是瞎扣上去的, 谈不上地道, 望大家多多指教.


用来炒菜的肉, 我从Costco 买来牛肉,猪肉分成小包,再放大包, 标记一下进冻箱,早上拿一包放到冷藏箱解冻, 晚上就可以用了. 不要完全解冻, 还好切.

牛肉我以前是用flank steak, 虽然很嫩, 但觉得会碎散,肉片炒出来不完整, 近来爱用tri-tip roast, 肉很嫩, 但不肥, 不容易散, 肉片很漂亮, 要逆纹切, 切大片, 孩子们叫它们 mini-steak.

猪肉我也爱用小里肌肉, 很嫩, 味道也很好. 也是切成小段, 用来调味配菜就用一包, 用来做主菜就用两包.

肉上浆的时候, 多捏几下, 肉会更 滑嫩.

鱼香味肉丝

材料:

- 肉丝: 绍酒,生粉,盐,胡椒, 蛋清, 给肉丝上浆, 入锅前加点油拌散,

- 水发木耳切丝,冰冻笋切丝

- 葱,姜,蒜,泡椒,泡姜, 切碎,

调汁: 酱油,糖,陈醋,(这三样是1:1:1 的量), 盐, 酒, 胡椒, 鸡粉, 淀粉,(这些就每样少许)混在一起调匀


1:油锅烧5成热后滑炒肉丝,变色后捞出

2:锅洗干净后,烧热, 倒油,放入葱白,姜, 蒜,泡椒,泡姜, 煸炒,放入木耳,笋丝,炒一会后,放入肉丝,快速翻炒后,倒入调汁, 洒青葱, 淋香油, 快速翻炒, 出锅,淋红油 (我淋在盘边上好看而已).

陈皮炒牛肉

材料 :

- 牛肉切片, 绍酒,生粉,盐,胡椒, 蛋清, 给肉片上浆, 搁半小时, 入锅前加点油拌散.

- 蒜,姜,切末,

- 干辣椒切段, 八角,桂叶,陈皮切丝,花椒,葱段, 红甜椒切丝,

调汁: 米酒 (没有酒酿),酱油,糖, 味精, 胡椒粉, 香醋, 高汤, 淀粉,

做法 :

- 炒锅油烧至7分热,放牛肉片下锅炒断生, ( 正统是热油炸过), 捞出

- 锅里留油一大匙烧热,放陈皮,干辣椒,花椒, 八角,桂叶,炒香,加姜,蒜, 爆香,加红甜椒, 炒软, 加牛肉片,到入调味料烧至滚,烧至汤汁收干, 加青葱段, 淋麻油拌匀, 即可。

台式卤肉-

五花肉切小丁,进热炒锅, 慢火煸炒出油,加蒜头,姜片,八角,油葱酥, 冰糖炒香, 加米酒, 五香粉, 酱油, 水, 煮滚,到入砂锅炖烂.

龙虾粉丝煲-

龙虾切块用米酒, 盐, 白胡椒, 淀粉腌10分钟,

热锅下油炒香葱白, 姜, 蒜 末, 放龙虾炒变色, 加酒, 金兰蒸鱼露, 糖, 高汤, 盖盖焖煮5分钟, 加泡过的粉丝 和青葱, 略烧一下, 加胡椒粉,淋麻油, 起锅.

泡椒鸡翅-

鸡翅切小段, 倒进放少量油的热锅煸炒至鸡皮略焦黄, 下 蒜片, 泡椒, 泡姜, 炒干, 加酒, 盐, 胡椒, 糖, 味精, 鸡汤, 焖煮, 收干, 既可.

孜然茴香炒鸡片-

鸡腿肉切片, 用孜然粉, 茴香粉, 辣椒粉, 胡椒粉, 盐, 酒, 淀粉, 腌10分钟,

热锅放少量油炒鸡片,断生取出,

锅里加,蒜, 姜末炒香, 加合掌瓜片, 红椒片炒软, 加鸡肉, 喷酒, 下盐,糖, 胡椒,鸡粉, 拌炒匀, 好了.

家常豆腐-

调味料: 耗油2TB, 酱油2TB, 糖1TB, 胡椒1/2 TSP, 酒1TB, 哈哈辣豆瓣酱1TB, 鸡汤 1罐,

豆腐(2合)切半寸厚块, 用厨用纸巾吸干水, 进热油锅,两面煎金黄,取出.

热锅炒香, 葱,姜,蒜末, 加肉末炒干, 加豆腐, 胡萝卜片, 调味料焖煮透, 加西葫芦片, 草菇, 拌炒, 收干水, 加淀粉水勾欠,

霉干菜蒸小排骨-

霉菜排骨,我是先用姜,八角, 冰糖爆炒焦香排骨,加绍酒,酱油, 烧干后放碗里, 霉菜也是用油,糖,酱油炒干水气后盖在排骨上,蒸1小时,这样的排骨不柴, 霉菜也很滑口,

黄焖田鸡腿 -

田鸡腿用酒,酱油腌5分钟后,沥干, 拍点淀粉进不粘锅煎金黄,(应该是油炸过的,会更好),

锅里用油煸炒香姜片,葱段,八角,干辣椒, 加酱油,糖, 鸡汤, 烧滚, 烧出味, 放田鸡, 盖盖焖煮5分钟, 把渣料取出,收汁,就好了.

番茄面筋炒包菜 -

补:

我看到罗宋汤里的包菜跟番茄很配, 家里院里只结了俩个番茄, 就把它们炒在一起,结果还真好吃, 我放了一个面筋花生罐头调鲜,

用蒜头炝锅, 我用纯橄榄油(但不是初榨的), 下包菜略干炒一下, 加罐头进去, 盖盖煮两三分钟包菜软了, 加番茄,一点盐,一点糖, 胡椒, 翻炒匀,就好了.

值得一试.
