豆酥雪鱼

鲜雪鱼用盐,米酒,腌大概20分钟,再抹上少量的蒸鱼酱,放盘里,上下放姜片和葱段,进滚水蒸锅,中火(火不要太大,火太大鱼肉会失水太快,发裂)蒸10分钟.取出鱼放干净盘(是为了弃去水和用过的葱姜),另用锅加油炒香豆酥,一点糖,大蒜末,姜末和葱花,到在鱼上.

全家齐说是保留菜.
