新鲜的黑木耳不能吃

  在去教室的路上,有一棵槐树,因为冬天,槐树的叶子已经掉光,参差披拂的树枝始终直指蓝天。每天,我们都要从这棵槐树边来回好几趟,早已习惯了槐树的存在。一次无意的抬头,我在看见蓝天的同时,还看见了一枝枯萎的槐树枝长满了可爱的小木耳。我有点兴奋地对身边的彭老师说:“看,木耳。”手已经指向了长满木耳的槐树枝。前几天刚刚下雨,木耳被雨水滋润得格外柔软,一朵朵乌黑莹润的爬在槐树枝上,倒像是树枝上开出了奇异的花。

  许是教生物的彭老师已经洞察我想去摘木耳的动机,遂说:“新鲜的木耳可不能吃。”新鲜的木耳不能吃?这可就怪了,不是说木耳含铁丰富、能养血驻颜,经常食用能令人肌肤红润、容光焕发、防治缺铁性贫血吗?我还听说,木耳中的胶质有吸附作用,能把残留在人体消化系统内的灰尘集中起来排出体外,从而起到清胃涤肠的作用,特别适合当老师的人食用。只是,彭老师怎么说新鲜的木耳就不可以食用了呢?那么我们平常吃的木耳又是怎么一回事?

  面对着我一连串的问题,彭老师也不着急,不紧不慢地对我说,新鲜木耳有毒,是因为木耳里含有一种叫卟啉的光感物质。它进入身体后,会导致皮肤对光敏感性大大增加,因而容易引发日光性皮炎、皮疹等,如果新鲜木耳吃的太多,还会引起呼吸道黏膜过敏而发生呼吸困难。

  彭老师还说,卟啉不溶于水,用水洗、浸泡等方法都不会降低新鲜木耳的毒性。但是卟啉类毒物可以在日光下自行分解,木耳经过日晒成为干制品之后,卟啉类毒物已经全部分解,所以干木耳没有毒性,可以任意食用。

  其实,木耳除了可以防止贫血、吸附灰尘以外,还有很多对人体有益的作用。比如:经常吃黑木耳可以令血液不粘稠,减少心肌梗死的发病率;木耳含有抗肿瘤的活性物质,能增强机体的免疫力,经常食用可以防癌抗癌;木耳含有维生素K,能维持体内凝血因子的正常水平,防止出血;木耳有良好的清肺功能,大城市雾霾严重,多吃点木耳做的菜也非常有必要。

  鉴于木耳对人体的种种好处,我们也不妨经常在自家的餐桌上摆一道木耳做的菜。

It's this kind of "Toxic" with the peanut is different, and only a handful of people to be allergic to peanuts, and fresh fungus of this toxicity is not a folk science, on Wikipedia have Comments, suggestions or eat well .
redis 回复 悄悄话 It is folk science, at best. 卟啉 is naturally synthesized in human body, for example, in red blood cells. So the tiny amount of 卟啉 one would consume in a dish won't cause any negative effect.

Some people can be allergic to fresh Wood Ear. It might be due to 卟啉, or some other chemical compounds we don't know. We can't say it has poisonous effects on human body, though. Some people are allergic to peanuts. In very severe cases, people got killed by eating peanuts. But we can't say in general sense that peanuts are poisonous.
