1 Put pumpkin into a saucepan. (I didn't add salt, just want to keep pumpkin's natural flavor). Add water until pumpkin are covered. Bring to boil, reduce heat and simmer, covered, 15-20 minutes, or until done - a fork can easily be poked through them.
2 Warm cream and melt butter, together, either in microwave or in a pan on the stove. Drain water from pumpkin. Put hot pumpkin into a bowl. Add cream and melted butter. Use potato masher to mash until well mashed. Use a strong spoon to beat further, adding milk to achieve the consistency you desire. Salt and pepper to taste if you like.

Preheat oven to 350¡ãF. In a medium bowl, sift together flour, baking powder, and salt.
In the bowl of an electric mixer fitted with the paddle attachment, beat cream cheese and butter until smooth. Add sugar, gradually, and mix until light and fluffy, scraping down the sides of the bowl as needed. Add zest, vanilla, and egg. Beat to combine. On low speed, add dry ingredients and mix until just combined. Do not overmix. If batter seems loose or warm, chill in the refrigerator until firm.
Drop by tablespoonfuls onto parchment-lined baking sheets, spacing 2-inches apart. Use a small ice cream scooper for uniform cookies and ease. Bake for 12-15 minutes, rotating halfway through, until barely golden on the bottom. Do not overbake! Let cool on baking sheets for 5 minutes, then transfer to wire racks to cool.  1 tablespoon butter 1 onion, chopped 1 10-ounce cooked,chopped spinach, thawed, drained well 1 9-inch home made pie crust 1 teaspoon all purpose flour 1/2 cup (about 2 ounces) grated Monterey Jack 1/2 cup (about 2 ounces) grated Parmesan 5 eggs 1 cup heavy cream 1/2 teaspoon salt 1/4 teaspoon pepper 1/8 teaspoon ground nutmeg Preparation: Melt butter in heavy medium skillet over medium-high heat. Add onion and saut¨¦ until translucent, about 8 minutes. Add spinach and stir until spinach is dry, about 3 minutes. Cool slightly. Preheat oven to 375¡ãF. Dust 1 side of crust with flour. Transfer to 9-inch-diameter quiche dish, floured side down. Press into pan, sealing any cracks. Trim edges. Sprinkle spinach mixture over bottom of crust. Top with cheeses. Beat eggs,cream,salt, pepper, nutmeg in large bowl to blend. Pour over spinach. Bake until filling is set, about 50 minutes. Cool slightly. Cut into wedges and serve.

 Dry rub: • 2 tablespoons salt • 2 tablespoons black pepper • 2 tablespoons dark brown sugar • 2 tablespoons paprika • 1/2 tablespoon cayenne • 4 pound shoulder pork roast (I cut it into small pieces) • 1 cup beef broth • 2 tablespoons Worcestershire • 1/2cup smoke BBQ sauce (I used half, then add ingredients below) • 1/2 tablespoon garlic powder • 2 tablespoons cider vinegar, 2 tablespoons packed brown sugar, 2 tablespoons ketchup Directions Preheat oven to 325 degrees F. Mix the dry rub ingredients in small bowl. Sprinkle dry rub all over the pork roast, pressing into the pork. Cover with plastic and refrigerate for at least 2 hours. Combine liquid ingredients and the garlic powder in a medium bowl and pour into a large pan. Chopped 2 med onion placed to bottom, Place pork in the oven and tightly cover with aluminum foil. Roast for about 3 hours or until fork tender and shreds easily. Remove from oven and let stand until cool enough to handle. Shred the pork with a fork or tongs into bite size pieces.
