牧羊人派晚餐 - Shepherd’s pie dinner

这是上个星期天做的吃的 -

Sunday dinner:

Shepherd’s pie dinner – 牧羊人派晚餐, 也叫 Cottage Pie

这个菜给有小朋友的家庭很好, 孩子们爱吃,同时又吃到很多蔬菜,

肉可以用不同的肉, 鸡肉, 火鸡, 羊肉, 剩的烤鸡, 熟肉, 等,

蔬菜也可用西葫芦, 茄子, 豌豆, 玉米, 等,

Filling:
1 lb lean ground beef, 瘦绞牛肉,
1 onion, chopped, 洋葱,
2 carrots, finely diced, 胡萝卜,
2 stalk of celery, finely diced, 西芹,
1 bell pepper, finely diced, 甜椒,
1 cup of mixed dried mushroom, soaked, drained, reserve 1 cup of the soaking liquid,
3 cloves of garlic, minced, 蒜,
1 tsp rosemary, finely chopped, (optional)
1 tsp thyme, finely chopped, (optional)
2 TB cup butter, 黄油,
2 TB cup flour,面粉,
1 cup of chicken broth, 鸡汤,
2 tsp Worcestershire sauce, 西式辣酱油,
2 TB tomato paste, 番茄膏,
2 tsp kosher salt and 1 tsp pepper


土豆泥用了懒人的现成的粉, 也可以自己用土豆来做,

Mashed potato topping: mix all the following in a heat proof bowl

1 bag of instant mash potato mix
4 Tb butter
3 cup of boiling water,
½ cup sour cream,
Salt and pepper to taste


黄油炒香洋葱, 蒜, 加牛肉再炒干, 多余的油倒出来,

加其它蔬菜和香料, 炒软,炒香, 加番茄膏炒, 加磨菇炒, 加面粉炒熟, 加鸡汤, 辣酱油, 盐和胡椒, 烧滚, 盖盖, 小火焖40分钟, 开盖收水, 盖上土豆泥, 撒点甜辣椒粉, 胡椒粉, 和一点百里香叶, 进400F烤箱, 25-30 分钟, 表面金黄, 就好了,


配了晚餐面包吃, 有点塌, 到是有点象Yorkshire Pudding , 又是歪打正着,哈哈…

晚餐面包 - Pull apart dinner rolls

用了Ruby@cuisine 的土司方子, 家里有cottage cheese, 就想用掉它, 那天Ruby上的面包好诱人, 谢谢Ruby.

用面包机发面后, 分成8个球, 放喷了油的烤盘里, 375F, 烤了25 分钟.

“方法是从网上搜索而来的,具体如下:
A料:1/2 cup 温水和 2 1/2 tsp 活性干酵母
B料:2 tbsp 室温下软化的黄油,1 tbsp 糖(如果要做甜面包,可适当增加糖的用量),1 枚室温下回暖的鸡蛋,1 cup cottage cheese,3 cup all purpose flour
C料:1 tsp 盐(如果做甜面包,则将盐的份量减少到一小撮即可)和1/4 tsp 苏打粉 (Baking soda)

步骤:
1、手工法:将A料加入到B料和C料的混合物中,揉成面团,室温下发酵到体积两倍大。
面包机面团功能:将A料先放入面包机;然后放入B料,并在顶端按个小坑;最后在小坑里放入C料,按面团功能发酵。
友情提示:不建议用面包机完成整个面包的制作。因为面包机做面包比较忌讳面团过湿,这会导致面包在烘烤过程中顶部塌陷。Cottage cheese 含一定的水分,不同的品牌水分不同,很难掌握湿度。所以还是将面团取出后自己整形、完成第二次发酵然后放入烤箱中烘烤会比较妥当。
2、将面团充分揉去气体,分割成四个大小均匀的面团,揉圆。
3、用黄油涂抹两个吐司面包烤盘的四壁和底部。
4、分别将小面团擀成长面片后滚成圆筒状,然后每两个并排放入一个烤盘中。室温下发酵到体积两倍大。
5、350F烤25分钟,或到用木勺轻拍面包顶部可闻空洞声,或牙签刺入后取出牙签上无粘连即可。”

周末早饭 - English muffin sandwich and open face omelet

English muffin sandwich –

Whole wheat English muffin, toasted
Fried egg
Sliced Avocado,
Sliced Tomato
Sautéed sweet onion
Lettuce
Fried slice of bacon

Open face omelet –

2 Eggs beaten and pour into non-stick skillet, when almost firm,

Add diced avocado, tomatoes, cooked sausage, sautéed onion, cilantro, sour cream, and salsa.

忍不住来晒晒我的新武器, 母亲节礼物, 其实我不需要这些, 我的刀和菜板已经太多啦, 不过还是很高兴收到它们,

刀是 ”旬, Shun, 8” chef, Ken Onion”, 看来Henkel and Wusthof 的刀真的不如Shun, 感觉有劲一点, 非常的快,

砧板, John Boos, 24”x18”x1.5”, 也很喜欢, 厚度正好, 很大, 很重, 不能搬来搬去的, 切好的菜要取出, 再运到锅里,

Shepherd's pie 在饭店吃过几次,但都不大对我胃口。你觉得怎样?
看来你把好刀搜齐了。那$100的砧板一般人就只有羡慕的份了。:-)
