Homemade French Saucisse with white beans 法国香肠烧白豆

This is wonderful French dish. I learned it from Julie Child's cooking show(DVD sets). Julie Child is an American icon for French chef. She was the first one who introduced French cooking into America. She also is the first person who started cooking show on TV. I don't know what year it was. Her DVD sets I had from Santa Clause one year had black and white, also in color as later show she did. I would assume she was on TV since 1940s.
Recipe for homemade Saucisse with white bean:
1 French Saucisse: about 1.5 to 2 lb
1.5lb white bean: socked in the water over night and drained
0.5 lb homemade spicy sausage
1 cup of chopped onion
Sea salt and fresh grounded black peppers

Below picture is a French Saucisse I made during the Christmas season. It is made of pork and wrapped with a cheese cloth. I will post my recipe in a different article. This one has been hung and dried for 3 days and it is ready to eat.


Step 1). In a French Dutch oven, brown a small spicy sausage. (You can use any type of sausages you like. Mine was homemade spicy sausage I made myself.)
Step 2). Add chopped onion and sautee in medium heat. See picture below.



Step 3). After onions have soft, add drained white beans and water. Bring it to boil. Note, the water should be just 1/4 inch higher than the beans. Turn the heat to low and simmer until the beans are fully cooked but still hold the shape. ~1 hour. Season it with sea salt and fresh grounded pepper.


Step 4). Put a French Saucisse into hot water and boil about 15 to 20 minutes depended upon the size of the Saucisse. Drain the Saucisse and cut into slices.
Step 5). In a serving plate, arrange sliced Saucisse on one side of plate and put the white beans on the other side. Serve hot. See below picture.



They are delicious.
