今天是田螺姑娘的生日,凑上几个家常菜,再献上红玫瑰一朵:

孜然羊肉串

烤箱版孜然羊肉串做法:
1.选lamb shoulder,有肥有瘦的肉烤羊肉串正好,
2.提前把切好小块的羊肉放在盆里,加少许盐,孜然,辣椒面一点料酒,一点菜油拌均,腌制一小时以上的时间,
3.同时把竹芊泡水(防止烤糊)
4.把腌制好的肉串成串,中间可夹块圆葱,也可不加,
5.把串好的肉串摆放到另一个方便干净的钢丝架上(注意羊肉串一定要悬空放置)
再在每串肉上先刷点油,撒些孜然或孜然粉,辣椒面和芝麻,
6.烤箱预热450至500F,我用BROIL档。放进中层烤5 分钟左右,视肉串多少,多观察,看冒油就好了。(烤的时间不能太长,否则羊肉串会焦老)

生日鱼块!(红烧带鱼)

红焖带鱼的做法:
红焖带鱼是老妈传给我的菜式之一,其实很简单的:鱼两面用油煎轻点,撒一点醋盖上锅焖一下, 把料酒,酱油,花椒面(或几粒花椒),几个干红辣椒, 几瓣大蒜切片,葱,姜切丝,一大勺糖,一小勺盐,加在一个碗里,再兑点水搅拌一下,倒入鱼锅里, 再加热水没过鱼身一多半,盖上锅小火炖十五分钟左右,汤收干时剩一点汁,就可撒上香菜就出锅了.特点是鱼肉嫩香辣,很下饭呢!
