归国记--美食乡土篇(2)

一方水土养一方美食,河南的黄土,黄河,和风沙,决定了河南的饮食是粗犷的,风味浓厚的。比如这个菜馍,就是这里家常的主食,不够精致,一样美味。
妈妈的菜馍做得非常好,外焦里嫩,软香可口,怎么都吃不厌。呵呵,这次劳驾妈妈当个老师,演示一下。

首先是调馅,妈妈的版本包括菠菜(切碎,攥去水分),豆腐,南瓜丝,粉丝,鸡蛋块,盐,胡椒,五香粉,芝麻油,偶尔还加一点香辣粉。

然后就是擀皮

把擀过一遍的皮绕在擀面杖上

松开

再次擀开,面皮变大了很多

重复上述操作,直到擀成薄皮

把馅放到面皮上

把多余的馅扫到皮上

把另一张皮用擀面杖挑起,盖在上面

慢慢的转动擀面杖,把面皮均匀的盖上

检查一下

用手把边上压实

平底锅,不要加油,烧热

把菜馍放到平底锅上

等到一面热得差不多了,翻个面
